Friends!!! We are back!

It’s 2019 and if you are looking for a Keto Plan, I’m sorry it’s not here. We have decided to cut meat from our dinners, but we clearly haven’t cut out dairy. This week was delicious and I’ve been pumped to get back to #DinnerIdeasServed.

Monday : Apple Grilled Cheese Domestic Superhero with homemade french fries and french fry dipping sauce

Tuesday :  Vegetarian Spicy Thai Noodles

Wednesday : Black Bean, Spinach, and Corn Enchiladas (**winner!)

Friday : Creamy Pesto Mac with Spinach

Bonus : Coriander Carrot Soup

(so a lot of cheese eek)

Apple and gouda grilled cheese on sourdough bread! This was so good. It’s really hard to go wrong with bread and cheese, but this was particularly delicious. We made it with these homemade french fries (which I lived off of for a week) and this savory french fry dipping sauce.

French fries go from perfectly cooked to burnt quickly so make sure to keep an eye on them.

Another Domestic Superhero home run. These Spicy Thai Noodle were a hit with both kids. We did them exactly as called for, but I would add a little more eggs to it. Make sure to really mix that baby up.

These were the winner. We had them 2 nights in a row and I had them for breakfast one day. Friends. Make this. It’s delicious. I could eat them all the time. Julia loved the filling too.

We didn’t make our own Enchilada Sauce (we bought Old El Paso) because we wanted to make them during the week and it massively simplified the recipe.

You can also make the filling and put it in the fridge for easy assembly before dinner. That way it was a quick fill, pour, and bake 20 minutes before eating.

We made too much of this. We basically made a recipe and a half because we are over eaters and my husband didn’t want to hold on to a cup of pasta, but really because we eat twice our servings.

This was great, Julie liked it. It was a nice way to sneak some spinach into our cheese week.

This was yummy. It’s a solid healthy meal, but we messed up on the coconut milk. It says 16 oz and we did a can which was 12oz and we could tell. It lacked creaminess. I would dare to say you could possibly add more than the 16 oz, but taste as you go.
