We got an Instant Pot! I wasn’t sure about the hype. I don’t eat meat or chicken, and I was just didn’t think it was something we would use.
One day I broke down and bought it. I was wrong. Jeff looked at me like I was insane. And then I made Fried Rice.

This Fried Rice is SO easy. And delicious. The girls will eat it. I will crush it. Jeff continues to request it.
It’s cheap to make and most of the ingredients are pantry items for us; so we can make it on a whim.
Plus, it is great for meal prepping and lunches. Divide it up and reheat it during the week. Or eat it cold. Seriously, doesn’t matter.
**I am mainly plant based, but I will have eggs once in a while. Ramen and Fried Rice have me.

The Instant Pot we got with the air fryer is huge. However, it has an air fryer, dehydrates foods into apple chips and jerky (hello!), as well as a million other cool things that I haven’t tried YET.

INSTANT POT FRIED RICE INGREDIENTS:
MAKES 4-5 SERVINGS
- 1 ½ cups white rice
- 1 ½ cups water
- 4 tablespoons soy sauce
- 3 teaspoons fish sauce
- 2 teaspoons sesame oil
- 4 eggs
- 1 large carrot chopped
- ½ cup frozen peas
**You can 100% use frozen mixed veggies from a bag. I recently ordered far too many carrots from Whole Foods Prime delivery. So, I’ve been chopping my heart out over here.
DIRECTIONS:
- Rinse the uncooked rice in under cold running water, in a rice bag or colander, until the water runs clear. Removing as much starch as possible. Drain well and put the rice into the Instant Pot.
- In a medium sized bowl, mix water, soy sauce, fish sauce, and sesame oil.
- Add 80% of it into the rice in the Instant Pot and stir to coat.
- Close the lid and make sure the valve is set to “sealing”.
- Set the Instant Pot to Pressure Cook/Manual for 5 minutes on high. (NOTE: It takes about 6 minutes for IP to come to pressure.)
- Once the IP time is up, let the pressure release naturally for 5 minutes (This means just leave the pot alone. It will say L00:00 and count up to 00:05. You can unplug the pot, if you want to)
- Then do quick release by turning the valve to “venting” until it’s done and carefully open the lid.
- Press Cancel to Reset the IP. Then press Sauté and On to briefly cook eggs
- Add the left over 20% sauce mixture to the mix
- Move the rice to the side of the pot; add peas, carrots, and scrambled uncooked eggs into the IP
- After a minute or two, use a wooden spoon to fluff the rice and mix the ingredients together.
- Time to add a bit of crunch! Secure the air fryer lid on the Instant Pot
- Press Cancel to Reset the IP. Select Air Fryer. Set your temperature to 370. Set the timer for 5 minutes.
- Open lid, mix, and do 2 more minutes with the Air Fryer lid
Fluff, serve, and enjoy!!

Things to Note!
- Fried Rice is a potluck of rice. If you have pineapple or onions… throw them in with (or in place of) the peas & carrots !
- If you don’t have an air fryer lid, leave the pot on sauté with the lid off. Cook the eggs for a bit and then mix intermittently until desired texture. Make sure to avoid the burn notice for the pot.
